Dried Lime & Lentil Soup

2 tbsp olive oil

1 large onion, finely chopped

1 tsp each ground cumin and coriander

2 tsp turmeric powder

½ cup split red lentils

½ cup basmati rice

3 dried limes, pierced 2-3 times

1 litre liquid vegetable or chicken stock

Handful of coriander leaves

Heat oil in a large pot over medium heat. Add onions and sauté for 10 minutes until lightly browned, stirring often. Add spices and cook for a minute more. Stir in lentils, rice, limes and stock. Bring to the boil then turn down heat to low, cover and simmer for 15 minutes until rice is tender. Season with salt and pepper and stir in coriander. Serves 4
