Green Millet

½ tightly packed cup coriander leaves
120g baby spinach leaves
1 cup liquid vegetable stock
¾ cup milk
3 tbsp olive oil
25g butter
2 cloves garlic, crushed
1 cup millet
Put the coriander, spinach, stock and milk in a blender and blend to puree.
Heat a large pot over a medium heat and add the oil and butter to melt. Add the garlic and millet and stir for 1 minute to heat through but not brown.
Add the contents of the blender and bring to the boil, stirring continuously. Cover the pot and cook over a very gentle heat for 10 minutes.
Remove the pot from the heat, fluff up the millet grains with a fork and adjust seasoning with salt and pepper. Serves 6
